Cake Decorating Tools And Tips

Pre-made icing flowers are a time-saving cake-decorating tool to have on hand.

Cakes can be simply decorated with a message written on top for a birthday celebration or with elaborate icing flowers and trims like those seen on wedding cakes. On a recent episode of her Food Network television show, Sandra Lee turned a plain boxed cake into a wedding-day centerpiece. "It's all in the finishing touches," she explained, which included bunches of powdered sugar-dusted green grapes and twirling white ribbons. Add this to my Recipe Box.

Revolving Cake Stand

A rotating cake stand simplifies cake icing by allowing you to rotate the cake while you ice. That means you won't have to stop and start when you need to spin the cake, leaving seams of icing. Opt for a model at least 3 inches high so you can easily decorate the bottom half of the cake and transfer it to your serving dish afterward. Or simply use the turntable as a cake stand.

Off-Set Spatula

An off-set spatula makes it easier to apply layers of butter cream or icing to your cake. The slightly elevated angle keeps your hand slightly higher than the cake, which reduces the chance that you'll drag your wrist through the icing in the process.

Pastry Bag and Tips

A pastry or decorating bag enables you to add frosting designs to your cake. Insert a decorative tip into the bag and fill it with your chosen icing color. A simple squeeze of the bag makes it easy to pipe trims, flowers and decorative details like stars, ruffles and basket weave details onto your cake.

Food Coloring

Instead of buying multiple colors of icing, invest in a set of edible icing colors or food coloring. Just a few drops of your selected color will transform white icing into a bright and vibrant hue. You can also mix and match colors to create unique tints.

Pre-Made Icing Flowers

Pre-made royal icing flowers simplify cake decorating. Making your own takes time and expertise. Home bakers and professional cake decorators alike opt for pre-made flowers to save time and effort and also ensure consistency of the design and quality. You can select just the right beautifully shaped flower in the appropriate size and color to add to your cake, with additions like pre-made icing leaves. You can usually find pre-made icing flowers at bakery supply shops and in your supermarket's baking aisle.

Packaged Fondant

Fondant, a sugar-based dough available pre-made, provides a satiny-smooth finish to your cake and a flat layer for decorating. Simply roll out the fondant as you would pastry dough and cover an iced cake with it. Or roll out a bit of fondant and cut out a variety of shapes such as hearts, bows, flowers and ribbons using a press set or a pairing knife.

Decorating Sets

Stencils and press sets also save decorating time and can improve the consistency of a cake design. Select from a variety of patterns, images or letters to easily create an outline that you can trace over with icing. Just lightly press the stencil onto your frosted cake and remove it. A slight pattern or indent will guide you in how and where to pipe your icing. Double up the heart stencils for a unique double heart border or choose cursive letters to perfectly pipe your birthday message onto your cake. Some press sets allow you to cut out your preferred shapes and sizes from pre-rolled icing, then apply them to your cake like edible stickers.
